Cheesy Cajan Garlic Chicken Rotini Skillet

Ingredients

  • (1 package) Boneless Skinless Chicken Breast - Medium
  • (12oz) Rotini Pasta
  • (2 tbsp) Olive Oil
  • (2 tbsp) Cajan Seasoning
  • (1 tsp) Garlic powder
  • (1/2 tbs) Onion Powder
  • (4 Cloves) Minced Garlic
  • (1 Cup) Heavy Cream
  • (1/2 Cup) Chicken Broth
  • (1 Cup) Shredded Mozzarella Cheese
  • (1/2 Cup) Grated Parmesan
  • (1/2 Cup) Shredded Cheddar Cheese
  • (Chopped For Garnish) Fresh Parsley

Directions

  • Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions.

  • Drain and set aside.

  • In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.

  • Add chicken to skillet and cook until browned and fully cooked, about 6-7 minutes. Remove from skillet and set aside.

  • In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.

  • Stir in chicken broth and heavy cream, then bring to a simmer.

  • Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.

  • Add cooked rotini and chicken back into the skillet.

  • Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.

  • Garnish with parsley and serve hot with extra cheese on top if desired
