Ingredients
- (1 package) Boneless Skinless Chicken Breast - Medium
- (12oz) Rotini Pasta
- (2 tbsp) Olive Oil
- (2 tbsp) Cajan Seasoning
- (1 tsp) Garlic powder
- (1/2 tbs) Onion Powder
- (4 Cloves) Minced Garlic
- (1 Cup) Heavy Cream
- (1/2 Cup) Chicken Broth
- (1 Cup) Shredded Mozzarella Cheese
- (1/2 Cup) Grated Parmesan
- (1/2 Cup) Shredded Cheddar Cheese
- (Chopped For Garnish) Fresh Parsley
Directions
- Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions.
- Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Add chicken to skillet and cook until browned and fully cooked, about 6-7 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
- Stir in chicken broth and heavy cream, then bring to a simmer.
- Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.
- Add cooked rotini and chicken back into the skillet.
- Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2-3 minutes to blend flavors.
- Garnish with parsley and serve hot with extra cheese on top if desired
